Directions:

  1. Combine the olive oil, sugar, and honey in a stand mixer fitted with the paddle attachment and whip on medium high for 3 minutes.
  2. Slowly add the egg and whip for an additional 2 minutes.
  3. Turn the mixer on low and slowly add the flour, salt, baking soda, and walnuts. Mix until the flour and wet ingredients are just combined.
  4. Chill the cookie dough for 15-30 minutes until slightly firm. (
  5. Preheat the oven to 350°
  6. Form the chilled cookie dough into small balls and roll each one in the powdered sugar. Place the cookie dough on a baking tray with a 2-inch space between each one and bake for 7-9 minutes. Cool on a cooling wrack.
