Oscars Heirloom Tomato Flatbread
Ingredients:
- 1 Flatbread, toasted
- 2 Heirloom Tomatoes, sliced
- ¼ cup Sundried Tomatoes, chopped
- ½ cup Crumbled Goat Cheese
- 1 cup Roasted Red Peppers
- 2 teaspoons Olive Oil
- 1 teaspoon Honey
- 1 tablespoon Lemon Juice
- Salt and Pepper
- ¼ cup Chives, chopped
Directions:
- Preheat oven to 400°F
- Lay out all of the heirloom tomatoes onto the flatbread slightly overlapping the layers.
- Sprinkle on the sundried tomatoes and crumbled goat cheese.
- Bake for 5 minutes. Meanwhile combine the red peppers, oil, honey, lemon juice, and a pinch of salt and pepper in the blender. Blend until smooth.
- Remove flat bread from the oven and drizzle on some of the red pepper sauce. Garnish with chopped chives.
