Fool’s Pizza
Ingredients:
- ½ cup Butter
- 1 cup Brown Sugar
- 2 Eggs
- 1 teaspoon Vanilla Extract
- 2 cups All Purpose Flour
- 1 cup Whole Wheat Flour
- ½ teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ¼ teaspoon Salt
- 1 teaspoon Cinnamon
Decorations:
- ½ cup Raspberry Preserves
- ½ cup Shredded Coconut
- ¼ cup Cashews
- Assorted Candies
Directions:
- Pre-heat oven to 350°F.
- Cream the butter and the sugar with a hand mixer until they are light and fluffy.
- Slowly add each egg one at a time until they are well incorporated.
- Combine the flour, baking powder, baking soda, salt, and cinnamon in a bowl and slowly add it to the butter and sugar. Mix until just combined.
- Portion cookie dough into two-tablespoon portions and form a round ball. Flatten out the ball and place it on a cookie sheet. Leave about an inch space between each cookie.
- Bake the cookies for 10-12 minutes in preheated oven.
- Allow the cookies to cool. Spread them with the raspberry preserves, top with shredded coconut, cashews, and assorted candies.
