Striped Berry Pops
Ingredients:
- 2 cups Coconut Water
- 2 drops Blue Food Coloring
- 1 cup Blueberries
- 2 cups Strawberries, chopped
- 1 teaspoon Sugar
- 2 cups Coconut Yogurt
- 8 Popsicle Sticks
- 2-4 cup Popsicle Molds
Directions:
- Combine the coconut water and the food coloring. Evenly distribute the colored coconut water into each mold. Top each with 4 or 5 blueberries. Cover the mold and freeze for 2 hours.
- Meanwhile puree the strawberries with the sugar. Once the coconut water layer has completely frozen add a thin layer of about 1-2 tablespoons of the strawberry puree. Freeze for about 1 hour.
- Spoon a thin layer of about 1- 2 tablespoons of the coconut yogurt over the strawberry layer. Freeze for about 1 hour.
- Repeat step 2 and cover the popsicle mold with foil paper. Place a popsicle stick in the center of each mold through the foil paper. Freeze for an additional hour.
- Repeat step 3.
- Add a final layer of the strawberry puree and freeze for 1-2 hours. Enjoy.
