Confetti Salad
Ingredients:
- 1 cup Shredded Carrot
- 1 cup Shredded Beets
- 1 cup Shredded Broccoli
- 1 cup Shredded Cucumber
- 3 cups Thinly Chopped Spinach
- 1 cup
Dressing:
- ½ cup Macadamia Nuts
- ½ cup Grapefruit Juice
- 3 teaspoons Lemon Juice
- 3 teaspoons Honey
- ¼ cup Macadamia Nut Oil
- ¼ cup Canola Oil
- 2 teaspoons Water
- Salt and Pepper
Directions:
- Layer all of the shredded vegetables in a clear bowl or a flat plate. Top with grapefruit segments.
- For the dressing place all of the ingredients in a blender and blend until smooth. Season with salt and pepper.
- Pour ¼ of the dressing over the salad and keep the rest on the side.
