Grilled Shrimp with Mango Salsa
Ingredients:
- 2 pounds Large Shrimp, peels and heads on
- 1 Garlic Clove, minced
- 2 Meyer Lemons, juiced
- 1 teaspoon Sugar or Honey
- Salt and Pepper
Salsa:
- 2 cups Mango, diced
- ¼ cup Red Onion, diced
- 1 Meyer Lemon, juiced
- 2 Roma Tomatoes, diced
- 4 springs Mint, sliced
- Salt and Pepper
Directions:
- Rinse shrimp in cold water. Set aside.
- Combine the garlic, lemon juice, sugar, salt and pepper in a bowl. Mix and pour over shrimp. Cover and refrigerate at least 20 minutes.
- Meanwhile mix all of the ingredients for the salsa in a large bowl. Set aside.
- Preheat grill or grill pan to a medium high temperature. Grill shrimp for 2-3 minutes per side. Remove from grill, peel and serve with mango salsa. Enjoy!
