BBQ Chicken
Ingredients:
- 1 Whole Chicken
Rub:
- ¼ cup Brown Sugar
- 2 tablespoons Paprika
- 2 tablespoons Onion Powder
- 1 tablespoon Garlic Powder
- 1 tablespoon Dry Mustard Powder
- 1 tablespoon Kosher Salt
- 1 teaspoon Black Pepper
BBQ Sauce:
- ½ cup Brown Sugar
- 1 cup Apple Juice
- 2 tablespoons Tomato Paste
- 1 cup Ketchup
- 1 tablespoon Dry Mustard Powder
- ½ cup Apple Cider Vinegar
- ¼ teaspoon Ground Red Pepper (optional)
- Salt and Pepper, to taste
Directions:
- Cut the whole chicken into 8 pieces. Set aside.
- Mix all of the ingredients for the rub in a small bowl.
- Generously coat the chicken with the rub, place in a large container and cover. Refrigerate for at least 20 minutes.
- To make the BBQ sauce pour all of the ingredients into a medium size sauce pot. Cook over low heat stirring frequently for 15-20 minutes. Separate the BBQ sauce into two bowls for serving and basting.
- Heat an outdoor grill or grill pan to a medium heat. Grill chicken for 10-15 minutes per side basting frequently with the reserved BBQ sauce. Chicken will be fully cooked when a thermometer registers 165°F when inserted into the center.
- Serve with reserved BBQ sauce. Enjoy!
