Tampa Bay vs. Kansas City Sliders (Pork Sliders)
Ingredients:
- 1 pound Boneless Pork Shoulder Roast
- 1 tablespoon Onion Powder
- 1 tablespoon Chili Powder
- 1 tablespoon Paprika
- 2 teaspoons Salt
- 1 teaspoon Pepper
- 24 Sweet Potato Dinner Rolls
- 2 cups Prepared Coleslaw
- Dill Pickles for Garnish
BBQ Sauce:
- 1 14 once can Crushed Tomatoes
- ½ cup Molasses
- ½ cup Ketchup
- ½ cup Brown Sugar
- ½ cup Apple Cider Vinegar
- 1 tablespoon Dry Mustard Powder
- 1 tablespoon Onion Powder
- 1 teaspoon Liquid Smoke
- 1-4 teaspoons Salt
- 2 teaspoons Fresh Black Pepper
Directions:
- Preheat oven to 375°F. Line a baking pan with foil paper.
- Pat dry the pork loin with paper towels. Season and rub the pork with the dry seasonings. Place on prepared pan and roast for 1 hour 20 minutes to 1 hour 40 minutes or until the pork is tender enough to pull apart.
- While the pork is roasting prepare the BBQ sauce. In a large sauce pot add all of the ingredients for the BBQ sauce. Simmer on low for 1 hour stirring occasionally. Season with salt and pepper to your taste.
- To assemble the pulled pork sandwiches first prepare the pulled pork. Use two forks to shred the roasted pork (optional: once the pork is shredded use a knife to chop the pieces into smaller strands). Place all the pulled pork in a large bowl. Add about 1 cup of the prepared BBQ sauce to the pulled pork and toss until fully coated.
- Slice all of the rolls in half with a serrated knife. Top the bottom of the rolls with the pulled pork and garnish with a pickle. Spread about a teaspoon of BBQ sauce on the top bun and place on top of the pork. Serve alongside prepared coleslaw and enjoy!
