Super Salmon Sandwich
Ingredients:
- 8 ounces - Salmon, skinned and de-boned
- 1 tablespoons - Lemon Juice
- 1 teaspoon - Fresh Dill, chopped
- ½ cup - Red Onion, minced
- 1 tablespoon - Olive Oil
- 8 Slices - Multi-Grain Bread
- ¼ cup - Fat Free Cream Cheese
- 1 - Tomato, sliced
- ½ cup - Arugula
- Salt and Pepper, to taste
- 8 - Toothpicks
- 4 - Grape Tomatoes, halved
Directions:
- Steam salmon until cooked through. Allow to cool.
- Flake salmon in a large bowl. Add lemon juice, olive oil, dill, salt and pepper to salmon. Stir gently and set aside.
- Spread a thin layer of the cream cheese on the bread. Add tomatoes, and then spoon on some of the salmon salad.
- Top with arugula and slice of bread.
- Cut sandwich in half. Garnish with toothpicks and grape tomatoes.
