Wild About Romaine
Ingredients:
Salad:
- 2 heart - Romaine Lettuce, torn in small pieces
- 1 Bulb - Fennel, sliced
- ¼ cup - Flat-Leaf Parsley, chopped
- ½ teaspoon - Thyme, chopped
Dressing:
- ¼ cup - Olive Oil
- ½ cup - Balsamic Vinegar
- 1 tablespoon - Lemon Juice
- Salt and Pepper, to taste
- ½ cup - Parmesan Cheese, shaved
- 1 can - Anchovies, Drained
Directions:
- Combine lettuce, fennel, parsley and thyme in a large bowl.
- Whisk together olive oil, vinegar, lemon juice, salt and pepper.
- Pour over salad and toss. Garnish with Parmesan cheese and anchovies.
