Oatmeal Sandwich Cookies

Ingredients:
- 1 ½ c All-Purpose Flour
- 2 c Old Fashioned Oats
- 1 tsp. Baking Powder
- ½ tsp. Salt
- ½ c Softened Butter
- 1 c Brown Sugar
- ¼ c Granulated Sugar
- 2 Eggs
- 1 tsp. Cinnamon Powder
- ¼ tsp. Clove Powder
- ¼ tsp. Nutmeg Powder
- 1 T Vanilla Extract
Filling:
- 1 c Softened Butter
- 2 c Powdered Sugar
- 1 T Vanilla Extract
- ½ tsp. Salt
Directions:
- Preheat oven to 375°F. Line two baking sheets with parchment paper.
- Combine dry ingredients in bowl.
- Use stand mixer fitted with paddle attachment to cream butter, brown sugar, and granulated sugar. Once creamed, add eggs one at a time. Mix until eggs have fully incorporated into mixture. Add cinnamon, clove, nutmeg and vanilla extract.
- Add remaining dry ingredients. Mix until just combined.
- Spoon tablespoon size mounds of cookie dough onto prepared baking sheets.
- Bake for 10-12 minutes or until edges are golden-brown and center is cooked through. Place cookies on cooling rack.
- To prepare filling: fit stand mixer with whip attachment. Whip butter and powdered sugar until volume has doubled. Add vanilla extract and salt. Mix.
- Once cookies are completely cool, spoon 2-3 teaspoons of filling on bottom of one cookie. Top with a second cookie. Repeat with remaining cookies. Enjoy!
