Avocado Sandwich

Ingredients:
- 2 ripe Avocado, sliced
- 8oz Fresh Mozzarella Cheese
- 2 medium Tomatoes, sliced
- 1 medium Cucumber, sliced
- 1 cup Lettuce
- 8 slices Whole Wheat Bread
Yogurt Sauce:
- ½ cup Greek Yogurt, plain unsweetened
- 1 tsp. Chopped Chives
- 1 tsp. Chopped Parsley
- ¼ tsp. Onion Powder
- ¼ tsp. Salt
- ¼ tsp. Pepper
Directions:
- Assemble ingredients for sandwich. If desired, toast slices of bread.
- Mix ingredients for yogurt sauce.
- Begin to layer sandwich starting with a tablespoon of yogurt sauce on each bread slice. On one slice layer the tomatoes, cucumber, cheese lettuce and top with avocado. Top with remaining bread. Enjoy!
