Beautiful Bok Choy Salad
Ingredients:
Salad:
- 4 cups - bok choy, chopped
- 1 cup - celery, chopped
- 1 - green pepper, chopped
- ½ cup - bamboo shoots, sliced
- 1 can - baby corn, halved
- 1 cup - pineapple, diced
Dressing:
- ½ cup - grape seed oil
- ¼ cup - rice vinegar
- 3 tablespoons - soy sauce
- 1 clove - garlic, minced
- 1 tablespoon - honey
Directions:
- In a large bowl, place bok choy, celery, green pepper, bamboo shoots, baby corn and pineapple. Toss.
- Using a small food processor, mix ingredients for dressing. Pour dressing over salad. Toss.
