Perfect Parmesan Pesto Muffins
Ingredients:
Muffins:
- 4 tablespoons - margarine, softened
- ¾ cup - low-fat milk
- 2 cups - whole wheat flour, sifted
- 2 - eggs
- 2 tablespoons - pesto
- 1/3 cup - parmesan cheese, grated
Pesto:
- 2 cups - basil leaves
- ¼ cup - parsley
- 2 cloves - garlic
- ¼ cup - pine nuts
- ⅔ cup - olive oil
- 2 teaspoons - lemon juice
- ½ cup - pecorino cheese, grated
- salt and pepper, to taste
Directions:
Pesto:- Combine all ingredients in food processor.
- Process until smooth.
- Preheat oven to 350ºF.
- Sift flower.
- In a large bowl, mix margarine, eggs and milk.
- Add pesto, Parmesan, salt and pepper.
- Slowly add flour to wet ingredients while mixing.
- Spoon batter into mini muffin cups. Bake 12 to 15 minutes.
