Almond Pear Salad

Directions:
- Put spring mix and arugula on serving platter. Top with remaining ingredients.
- Use blender to mix dressing. Add all ingredients to blender cup. Blend for 1 minute or until smooth.
- Pour 2-6 tablespoons of dressing over salad. Slightly toss and serve.
- Reserve any remaining dressing in covered container in refrigerator for up to 1 week. Enjoy!

- 4 cups Spring Mix
- 2 cups Arugula
- 2 Anjou Pears
- 2 tablespoons Goji Berries
- 3 tablespoons Salted Almonds, chopped
- ¼ cup Cauliflower Florets, chopped
- ½ cup Sliced Cucumbers
- 1 cup Grape Tomatoes
Dressing:
- ¼ cup White Wine Vinegar
- ¼ cup Extra Virgin Olive Oil
- ¼ cup Mayonnaise
- 10 Whole Roasted Almonds
- 1 tablespoon Honey
- 1 teaspoon Salt
- ¼ teaspoon Pepper
