Summer Fruit Pizza

Directions:
- Heat oven to 325°F. Wash and dry 12-inch round pizza pan.
- To make the crust: mix flour, cinnamon, salt and baking soda in bowl and set aside. Next cream butter, powdered sugar and granulated sugar by using whisk or hand mixer fitted with the whisk attachments. Add egg and vanilla extract. Whip for an additional 2 minutes.
- Slowly incorporate flour mixture until cookie dough is formed.
- Transfer cookie dough to prepared pizza pan and use your fingertips to spread dough all around the pan. (Dough will spread out slightly as it bakes.) Bake for 15-20 minutes or until golden brown. Let crust completely cool before adding any additional toppings.
- Meanwhile make the pizza "sauce." In medium bowl whip softened cream cheese, powdered sugar and vanilla extract. Set aside.
- Once crust has cooled, spread pizza "sauce" on crust leaving a ¼ inch outer edge. Decorate with prepared fruit toppings starting from the middle of pizza and moving outward toward edge. Once decorated take pictures, slice and enjoy!

Pizza Cookie Crust:
- 2 cups All-Purpose Flour
- 1 teaspoon Cinnamon
- ¼ teaspoon Salt
- 1 teaspoon Baking Soda
- 1 cup Powdered Sugar
- 2 tablespoons Granulated Sugar
- ½ cup Butter, room temperature
- 1 Egg, room temperature

- ½ cup Powdered Sugar
- 1 tablespoon Vanilla Extract
Pizza Toppings:
- 3 Kiwi, peeled and sliced
- 1 cup Blueberries
- 1 cup Raspberries
- 1 cup Blackberries
- 1 cup Strawberries, tops removed and sliced
- 1 cup Grapes
- 1 cup Mandarin Orange Segments
