Egg Burrito

Directions:
- Crack eggs into large bowl and whisk well.
- Warm large sauté pan. Add oil, then sauté onion and pepper.
- Add eggs and scramble until dry. Add cheese and salt and pepper.
- Warm burrito shells on both sides.
- Assemble burrito starting with scrambled eggs. Add black beans, tomatillo salsa, yogurt, avocado and tomatoes.
- Fold the edges of the burrito and roll over to make a tight roll.

- ½ cup diced Onion
- ½ cup diced Orange or Yellow Bell Pepper
- 1 cup Cheddar Cheese, shredded
- 4 Extra Large Burrito Shells
- 1- 5 ounce can Black Beans,drained
- ½ cup Tomatillo Salsa
- ½ cup Plain Greek Yogurt
- 2 Ripe Avocados, peeled and diced
- ½ cup Diced Tomatoes
