Honey BBQ Chicken

Directions:
1. Preheat oven to 375°F. 2. Add all ingredients for BBQ sauce into small sauce pot. Cook over low heat for 3-4 minutes until all ingredients have come together. Taste for seasoning and adjust accordingly. 3. Mix dry spices for rub in small bowl. Set aside. 4. Wash and dry chicken. Turn chicken breast side down on a cutting board. Use scissors to make an incision along the side of the spine (Optionally you can leave back spine attached or remove it and save for chicken stock). 5. Once chicken lays flat use dry rub to season both front and back of chicken. 6. Place on foil lined baking sheet. Bake in preheated oven for 60-90 minutes or until a thermometer inserted into thigh reads 165°F. Baste chicken 2-4 times with BBQ sauce while it is cooking. Spread remaining BBQ sauce on chicken during last 5 minutes of cooking time. Rest for 15 minutes at room temperature before you cut into cooked chicken. Enjoy!Equipment:

- ¼ cup Honey
- 2 tablespoons Brown Sugar
- ¼ cup Dijon Mustard
- 2 tablespoons Tomato Paste
- 2-4 tablespoons Water
- 2 tablespoons Apple Cider Vinegar
- Salt and Pepper
Dry Rub:
- 2 tablespoons Smoked Paprika
- 1 tablespoon Onion Powder
- 2 teaspoons Salt
- 1 teaspoon Pepper
- ¼ teaspoon Mustard Powder
- 1 Whole Chicken
