Stuffed Avocado

Directions:
- Slice avocadoes in half and remove seed. Rub fruit of avocado with olive oil. Season with salt and pepper.
- Chicken salad: mix mayonnaise sour cream and vinegar in large bowl. Once combined add remaining ingredients. Adjust seasoning to your personal preference. Stuff avocado with chicken salad. Enjoy.
- Shrimp salad: slice cooked shrimp lengthwise. Set aside. Place mayonnaise, lime juice, sugar, and cilantro in small blender. Blend until smooth. Pour cilantro mayo over shrimp. Add diced peppers and season with salt and pepper. Stuff avocado with shrimp salad. Enjoy!
