Directions:
- Start by making pastry dough: mix flour, cinnamon, sugar and salt in large bowl. Use fork or pastry blender to cut butter into flour. Once butter resembles small peas, add cold water and mix just until dough forms. Wrap dough with plastic wrap and chill for 30 minutes.
- Meanwhile, peel and core apples. Mix brown sugar, cinnamon, and nutmeg in small bowl. Preheat oven to 400°F. Spray 13x9 baking dish with nonstick spray.
- Portion chilled dough into 6 balls. Roll each ball one at a time into a 7-inch round circle. Place peeled apples in center of dough and spoon on cinnamon sugar. Top with butter and use pastry to wrap apple/cinnamon mixture. Pinch seams closed and place in baking dish. Repeat wrapping processes with remaining apples. Chill dumplings for at least 10 minutes before baking.
- To make sauce: bring water, sugar, and vanilla to a boil in small sauce pot.
- Pour sauce over apples and bake for 45 minutes or until pastry is golden brown. Allow to cool slightly, serve with ice cream, and enjoy!
