Peach Cobbler

Directions:
- Preheat oven to 375°F. Spray 8x8 baking pan with nonstick cooking spray.
- Peel, pit, and slice peaches. You should end up with 3 cups of sliced peaches.
- Toss peaches in lemon juice, brown sugar, vanilla extract, salt, corn starch and cinnamon. Pour coated peaches into prepared pan.
- To make cobbler topping mix dry ingredients in large bowl. Next cube the cold butter and cut it into the oatmeal flour using a butter knife or a fork. Once the butter resembles large peas in the flour add the vanilla extract and the buttermilk. Use a fork to slowly mix the mixture. The topping will look similar to a drop biscuit dough.
- Next dollop the cobbler topping on the peaches and bake for 25-35 minutes or until the topping is golden brown. Let stand for 10 minutes. Enjoy!
