Twice Baked Potatoes

Directions:
- Preheat oven to 400F.
- Wash and dry potatoes. Place potatoes in baking pan. Rub with oil, salt and pepper. Bake for 45 minutes or until knife can be inserted into center without resistance.
- Place bacon on lined baking sheet. Bake in oven for 10-20 minutes or until crispy. Chop when cool. Set aside.
- Once potatoes are cooked, slice them in half. Use spoon to scoop out center of potato. Mash gently with a fork until just slightly lumpy.
- Place mashed potatoes into a bowl. Add 1 cup of cheese, sour cream and salt and pepper. Mix gently.
- Optional: In separate bowl, mix chicken with BBQ sauce and seasoning salt. Place 2-4 tablespoons of chicken at the bottom of each potato skin.
- Top potato skins with mashed potato mixture. Sprinkle with remaining cheese. Return to oven and bake for 5-10 minutes or until cheese is melted.
- Top with sour cream, bacon and chives. Serve with side of BBQ sauce. Enjoy!

- 2 tablespoons Olive Oil

- 1 ½ cups Cheddar Cheese, shredded
- 1 cup Sour Cream
- 4 slices Bacon
- 1 Green Onion, sliced
Optional:
- 2 cups Roasted Chicken, shredded
- 4-6 tablespoons BBQ Sauce
- Steak Seasoning Salt
