Celebrate National Potato Day with our Twice as Good Twice Baked Potato!

Directions:
Preheat oven to 400F.
Wash and dry potatoes. Place potatoes in baking pan. Rub with oil, salt and pepper. Bake for 45 minutes or until knife can be inserted into center without resistance.
Place bacon on lined baking sheet. Bake in oven for 10-20 minutes or until crispy. Chop when cool. Set aside.
Once potatoes are cooked, slice them in half. Use spoon to scoop out center of potato. Mash gently with a fork until just slightly lumpy.
Place mashed potatoes into a bowl. Add 1 cup of cheese, sour cream and salt and pepper. Mix gently.
Optional: In separate bowl, mix chicken with BBQ sauce and seasoning salt. Place 2-4 tablespoons of chicken at the bottom of each potato skin.
Top potato skins with mashed potato mixture. Sprinkle with remaining cheese. Return to oven and bake for 5-10 minutes or until cheese is melted.
Top with sour cream, bacon and chives. Serve with side of BBQ sauce. Enjoy!
