Birthday Bananas
Yield: 4 - 6 servings Cooking Time: 2 hours 15 minutes Difficulty: Easy

Directions:

  1. Cut bananas into 2 inch pieces.  (Bananas should not be too ripe)  Insert a toothpick into the center of the banana.
  2. Place bananas on a baking sheet lined with wax paper and then place in freezer for 1 to 2 hours until frozen.
  3. Melt chocolate chips in the microwave in 30 second intervals stirring the chocolate between each time.
  4. Dip bananas in chocolate.
  5. While chocolate is still soft, dip in coconut and pecans.
  6. Return bananas to freezer until chocolate has hardened.
