Directions:
Fish:- Preheat oven to 450°F. Move shelf to lowest position.
- Set a wire rack on a baking sheet and coat with cooking spray. You can also use a taco mold.
- Season fish with salt and pepper.
- In a large bowl, crush the rice cereal with your fingers.
- In a separate bowl, briskly whisk egg and a pinch of salt until bubbly.
- Dip the fish in the egg and then roll in cereal. Coat evenly.
- Position fish on their sides on rack and lightly spray with olive oil.
- Bake the fish on the bottom oven rack until crispy (10-12 minutes).
- Preheat oven to 450 degrees.
- Toss potatoes with olive and salt in a large bowl. Coat the potatoes well.
- Arrange potatoes on a large baking sheet in a single layer.
- Bake potatoes for 15 minutes then turn. Bake an additional 15 minutes until crispy.
- Sprinkle with salt, basil, and Parmesan.
- In a bowl whisk sour cream, malt vinegar, salt, sugar and mint.
- Serve alongside the fish.

- 3 cups - crispy rice cereal
- 3 - egg whites
- 1 ½ pounds - grouper, skinless boneless
- salt and pepper, to taste
Chips:
- 3 - sweet potatoes, sliced thin
- ¼ cup - olive oil
- ¼ cup - parmesan cheese
- ¼ cup - basil, torn
- salt, to taste
Dipping Sauce:
- 2 teaspoons - sour cream
- ½ cup - malt vinegar
- salt, to taste
- 1 teaspoon - sugar
- 1 teaspoon - mint, chopped
