Halibut with Roasted Pepper Sauce
Yield: 4-6 Servings Cooking Time: 45 Minutes Difficulty: Easy Full Episode: The Amazing Mote Marine Laboratory (Season 3)


  1. Preheat oven to broil. Line a baking sheet with foil.
  2. Place fillets of halibut onto the lined baking sheet.
  3. Combine the olive oil, turmeric, chopped chives, salt and pepper in a small bowl. Mix well. Use a pastry brush to brush each fillet with some of the seasoned oil. Bake in the oven for 8-10 minutes. Fish should be golden brown and fully cooked.
  4. For the sauce, heat a small saucepan to medium heat. Add oil and chopped shallots. Cook until the shallots are soft and translucent.
  5. Add the roasted red peppers, sundried tomatoes, and vegetable broth. Simmer for 15 minutes.
  6. Pour the roasted red pepper mixture into a blender and blend until smooth. Add the butter and re-season if necessary.
  7. Pour over the cooked halibut.
