Strawberries Amaretto

Directions:
- Slice strawberries. Place in small bowl and dust with sugar. Set aside to macerate strawberries.
- In a small saucepan place the amaretto liqueur. Place on high heat to boil and burn the alcohol There will be a moderate flame while the alcohol burns off so be careful. Set aside to cool.
- In a high-speed blender add burned-off amaretto, sugar, egg yolks and cream. Blend until smooth. Chill.
- Place sliced strawberries with a little juice in a martini. Top with amaretto sauce and garnish with mint.

- 2 pints Fresh Strawberries
- ¼ cup Granulated Sugar
Amaretto Sauce:
- 8 ounces Cream Cheese
- ¼ cup Granulated Sugar
- 2 ounces Amaretto Liqueur
- 2 ounces Pasteurized Egg Yolk
