Beautiful Bok Choy Salad
Yield: 6 - 8 servings Cooking Time: 15 minutes Difficulty: Easy

Directions:

  1. In a large bowl, place bok choy, celery, green pepper, bamboo shoots, baby corn and pineapple. Toss.
  2. Using a small food processor, mix ingredients for dressing. Pour dressing over salad.  Toss.

Ingredients

  • Salad:
  • 4 cups - bok choy, chopped
  • 1 cup - celery, chopped
  • 1 - green pepper, chopped
  • ½ cup - bamboo shoots, sliced
  • 1 can - baby corn, halved
  • 1 cup - pineapple, diced
  • Dressing:
  • ½ cup - grape seed oil
  • ¼ cup - rice vinegar
  • 3 tablespoons - soy sauce
  • 1 clove - garlic, minced
  • 1 tablespoon - honey
