Halibut with Roasted Pepper Sauce

Directions:
- Preheat oven to broil. Line a baking sheet with foil.
- Place fillets of halibut onto the lined baking sheet.
- Combine the olive oil, turmeric, chopped chives, salt and pepper in a small bowl. Mix well. Use a pastry brush to brush each fillet with some of the seasoned oil. Bake in the oven for 8-10 minutes. Fish should be golden brown and fully cooked.
- For the sauce, heat a small saucepan to medium heat. Add oil and chopped shallots. Cook until the shallots are soft and translucent.
- Add the roasted red peppers, sundried tomatoes, and vegetable broth. Simmer for 15 minutes.
- Pour the roasted red pepper mixture into a blender and blend until smooth. Add the butter and re-season if necessary.
- Pour over the cooked halibut.
