Hurry Hurry for Chicken Curry Salad

Directions:
- In a medium bowl combine mayonnaise, apricot preserves, curry, and lime juice, whisk.
- Add chicken, mango, grapes, celery, scallions, cilantro, and parsley and toss.
- Place chicken salad on a bed of baby spinach. Sprinkle with almonds.

- ½ teaspoon - curry powder
- ½ cup - lime juice
- 2 cups - roasted chicken, diced
- 1 - mango, peeled and diced
- ¾ cup - celery, diced
- ½ cup - scallions, chopped
- 1 tablespoon - cilantro, chopped
- ½ cup - almonds, sliced
- salt and pepper, to taste
