  1. Slice strawberries. Place in small bowl and dust with sugar. Set aside to macerate strawberries.
  2. In a small saucepan place the amaretto liqueur. Place on high heat to boil and burn the alcohol There will be a moderate flame while the alcohol burns off so be careful. Set aside to cool.
  3. In a high-speed blender add burned-off amaretto, sugar, egg yolks and cream. Blend until smooth. Chill.
  4. Place sliced strawberries with a little juice in a martini. Top with amaretto sauce and garnish with mint.

  • 2 pints Fresh Strawberries
  • ¼ cup Granulated Sugar
  • Amaretto Sauce:
  • 8 ounces Cream Cheese
  • ¼ cup Granulated Sugar
  • 2 ounces Amaretto Liqueur
  • 2 ounces Pasteurized Egg Yolk
