Hurry Hurry for Chicken Curry Salad

Directions:

  1. In a medium bowl combine mayonnaise, apricot preserves, curry, and lime juice, whisk.
  2. Add chicken, mango, grapes, celery, scallions, cilantro, and parsley and toss.
  3. Place chicken salad on a bed of baby spinach. Sprinkle with almonds.

  • 2 tablespoon - apricot preserves
  • ½ teaspoon - curry powder
  • ½ cup - lime juice
  • 2 cups - roasted chicken, diced
  • 1 - mango, peeled and diced
  • ¾ cup - celery, diced
  • ½ cup - scallions, chopped
  • 1 tablespoon - cilantro, chopped
  • ½ cup - almonds, sliced
  • salt and pepper, to taste
