Perfect Parmesan Pesto Muffins

Directions:

Pesto:
  1. Combine all ingredients in food processor.
  2. Process until smooth.
 Muffins:
  1. Preheat oven to 350ºF.
  2. Sift flower.
  3. In a large bowl, mix margarine, eggs and milk.
  4. Add pesto, Parmesan, salt and pepper.
  5.  Slowly add flour to wet ingredients while mixing.
  6. Spoon batter into mini muffin cups.  Bake 12 to 15 minutes.

Ingredients

  • Muffins:
  • 4 tablespoons - margarine, softened
  • ¾ cup - low-fat milk
  • 2 cups - whole wheat flour, sifted
  • 2 - eggs
  • 2 tablespoons - pesto
  • 1/3 cup - parmesan cheese, grated
  • Pesto:
  • 2 cups - basil leaves
  • ¼ cup - parsley
  • 2 cloves - garlic
  • ¼ cup - pine nuts
  • ⅔ cup - olive oil
  • 2 teaspoons - lemon juice
  • ½ cup - pecorino cheese, grated
  • salt and pepper, to taste
